I have been resisted buying a food processor for years. I don’t know why really. Maybe I thought a blender was good enough. Or maybe I thought my cupboards didn’t need yet another gadget. But last week, when I wanted to try a recipe that called for 12 (yes 12!) chopped garlic cloves, I broke down and bought one. I’ve used it twice since then and I have to say, it is very handy! It is actually inspiring me to try new things. I’ve found that I really like creating marinades using things that I have on hand. On tonight’s menu, Cilantro Citrus Chicken Recipe.

4 Boneless Skinless Chicken Breasts (butterfly if they are really big)
1/2 of a white onion
2 gloves of fresh garlic
1/4 cup lemon juice
1/4 cup lime juice
2 tbs white vinegar
2 tbs dried parsley
2 tbs cilantro (or more if you love the stuff as much as I do!)
1 tbs thyme
1 tbs olive oil
Dash of fresh ground pepper
Combine all marinade ingredients in food processor. Blend on high for 1 minute or until smooth. Place chicken in a zip lock bag and cover with marinade. Allow chicken to sit in fridge for 6-12 hours. Grill on BBQ til done.
