Chocolate Saltine Toffee
CHOCOLATE SALTINE TOFFEE
recipe is from Averie Cooks 30-40 saltine crackers 1 cup butter 1 cup brown sugar, packed 1/2 tsp vanilla extract 1 1/2 to 2 cups chocolate chips Preheat oven to 350°F. Line a 9 x 11 inch or similar size pan with foil and spray very well with cooking spray. Place crackers in single layer on bottom of pan. In saucepan on stove top, combine butter and sugar and bring to a boil while stirring constantly. Once a boil is reached, reduce heat and simmer, uncovered, for 3- 5 minutes or til mixture has thickened some. Stir mixture frequently while it simmers to avoid bubbling or scorching. Pour mixture over crackers. Bake in oven 5-7 minutes, or til toffee becomes bubbly. After removing pan from oven, let sit for 3-5 minutes. Sprinkle on the chocolate chips and wait for 3-5 minutes, letting them soften and melt a bit, then spread and smooth into an even layer with spatula. Optional: After smoothing chocolate, add nuts, graham cracker crumbs, toffee bits, dried fruit, candy bits or swirl in some peanut butter. You can also use other types of chips such as butterscotch, white, or peanut butter. Let cool very well; for faster hardening, you can refrigerate or freeze. Break into pieces the size of your choice. Store in an airtight container. |
