Whitney & Ashley's Flawless Roasted Vegetables
I found this recipe in an ad for Reynold's Parchment Paper. I made this last week, and the squash was yummy this way! I made just half a recipe, and left out the onion and the red bell pepper.
WHITNEY & ASHLEY'S FLAWLESS ROASTED VEGETABLES
1 onion, cut in wedges
2 zucchini, sliced
2 yellow squash, sliced
1 red bell pepper, sliced
2 TBSP olive oil
2 tsp dried Italian seasoning
salt & pepper
1 lemon, halved
Heat oven to 400°F. Line shallow baking pan with parchment paper.
Place vegetables in bowl. Add oil, seasoning, salt, and pepper; mix well. Place vegetables in single layer on prepared pan. Sprinkle on additional seasonings if desired. Place pan in oven on top rack.
Bake 15 minutes or til veggies are crisp-tender. Serve with lemon.
