Chili Pumpkin Soup with Dumplings/thanks Plath!
Chili Pumpkin Soup with Dumplings

4 cups vegetable stock
2 1/2 lbs pumpkin, diced
1 med onion, chopped
2 cloves garlic
1 tsp dried chili flakes
1 tsp chili powder
salt and pepper to taste
1 cup flour
2 tsp baking powder
1/2 tsp salt
1/4 cup margarine or butter
1/2 cup milk

Bring stock to a boil. Add all other soup ingredients, cover and simmer until the pumpkin is cooked (soft). Transfer the soup in batches to a food processor and puree. Return pot to stove. To prepare dumplings, stir dry ingredients together. With a pastry blender, cut in butter or margarine. Add milk and stir until dough forms. Drop dough in small balls into simmering soup. Cover, and simmer for 10 minutes or until dough is cooked though.

This is really good. I usually double the recipe and then
divide into single serving freezer containers.
