I made that King Ranch chicken casserole, but by the time it was done I wasn't hungry. The S.O. and I both get tired of eating leftovers, or I package them nicely and let them age in the refrigerator until they grow legs and walk around in there. This time I just gave half the thing away right outta the oven (it really is sometimes difficult to cook for just 2 people).
