Baked Lima-Cheese Crunch
Ingredients
2/3 cup onion, finely chopped
1 teaspoon vegetable oil
1 can (16 ounces) BUSH'S BEST Lima Beans
1 cup shredded cheddar cheese
½ cup mayonnaise
¼ teaspoon pepper
1 cup bite-size cheese crackers, crushed
Directions
In a skillet, cook onion in oil until tender. Drain beans, reserving
½ cup liquid. In a lightly-greased 1 ½-quart casserole, combine
beans, reserved liquid, ½ cup cheese, onion, mayonnaise and
pepper. Spread remaining cheese over bean mixture; top with
cracker crumbs. Bake at 350 for 25 to 30 minutes or until bubbly.
