Smile House Special Black Beans & Fixings...

Heya Guys....

Wanted to get something yummy and healthy prepped for tomorrow's Sunday brunch. I spent a lot of time in Southern Florida and rice & beans are a family staple. Not only are they full of healthy fiber & protein but they are naturally low in fat....also a great way to get 3 or 4 vegetables into your family I'm giving you my recipe but feel free to tweak it as suits your taste! ..

Ingredients:

Either a bag of dry black beans you have soaked and simmered the night before (best) or quick & easy (what I'm doing now) 2 large cans of Progresso (or your fav.) black beans.

Nice sized green bell pepper and medium onion coarsely chopped

Large can of diced tomatoes with basil & olive oil

1/2 cup of red wine (optional)

1 cup of finely chopped leaks or (better) vidalia onion..

For seasoning I use salt, pepper, garlic and a dash of old bay. I also hit it throughout the cooking cycle with hot sauce to flavor.


Saute the onions and peppers in olive oil over medium heat...add the seasonings and wine halfway through. Add the diced tomatoes and black beans and let simmer over a low heat about 30 minutes. Stir and tweak hot sauce to personal taste.

Serving suggestions:

I'm going to plate mine over yellow Spanish rice in oversized bowels with a dollop of sour cream, diced vidalia onions and lots of hot sauce. Grated cheese is also a nice touch.

This goes great with a simple mixed green salad on the side with a basil vingerette. Hubby has some smallish strip steaks he is going to slice into thin strips (against the grain to keep it tender) & stir-fry... they get plated over the salad and served with the black beans & rice.... If you have fresh lemon or lime squeeze a generous wave over all the dishes.

Have ice tea or lemonaide....we'll be drinking ice cold beer to battle the hot sauce!

Lol, Come on down - the more the merrier - it's about 77 degrees here today woo hoo!!

Mary, yuppity... leeks are pricey, the vidalians look and taste the same for a fraction of the cost..

Critbunny...I been eating beans off and on all day...better have those anti-flatulence filters on standby, hee, hee, hee...
