Amazing Stew


1 pound beef chuck roast or sirloin tip roast, cut into 1-inch cubes

1 (14-ounce) can consomme

5 ounces red wine

1 onion, sliced

1/4 cup dry bread crumbs

1/4 cup all-purpose flour

1 tablespoon Kitchen Bouquet seasoning (optional)

1/2 teaspoon Worcestershire sauce

Salt and pepper to taste

2 cups sliced carrots

2 cups chopped peeled potatoes

Chopped parsley

Preheat the oven to 350 degrees. Combine the beef, consomme, wine, onion, bread crumbs, flour, Kitchen Bouquet, Worcestershire sauce, salt and pepper in a large bowl and mix well. Spoon into a large roasting pan and bake, covered, for 1 hour. Add the carrots, potatoes and additional wine or water if needed. Roast for 1 to 2 hours longer or until the meat and vegetables are tender. Garnish with the parsley. This recipe may be doubled. Makes 4 to 6 servings.
