Smile Easy Refreshing Lemon Cookies

Lemon Cookies

Makes 2 dozen cookies
Refreshing! A great lemon cookie treat made easy with cake mix and frosting. They're great with lemonade on a hot summer day.


RECIPE INGREDIENTS

1 package Betty Crocker SuperMoist lemon cake mix
1/3 cup shortening
1/3 cup butter or margarine, softened
1 egg
1 tub Betty Crocker Whipped or Rich & Creamy lemon ready-to-spread frosting

RECIPE METHOD

Heat oven to 375 degrees F. Stir about half of the cake mix (dry), the shortening, butter and egg in medium bowl until well mixed. Stir in remaining cake mix.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet.

Bake 10 to 12 minutes or until light brown around edges. Cool 1 minute; remove from cookie sheet; cool completely. Frost with frosting.

Default Lemon Brownies

Wow...I haven't tried these but, boy, do they sound AWESOME!!

1 1/2 cup all-purpose flour
1 1/2 cup sugar
1 teaspoon salt
1 cup (2 sticks) butter; room temperature
4 eggs; room temperature
Juice from 1/2 lemon
Zest from 1 lemon

Lemon Curd:
1/2 cup sugar
pinch of salt
3 tablespoons fresh lemon juice
3 egg yolks
1 teaspoon lemon zest


Preheat oven to 350°. Line the bottom only of a 9X13X2-inch baking dish with Parchment paper and spray with Pam.

In a mixing bowl, stir together flour, 1 1/2 cup sugar and 1 teaspoon salt; add butter until combined.

Stir together eggs, juice from 1/2 lemon and zest from 1 lemon; stir into batter and pour into prepared pan. Bake for 30 minutes or until set. Remove from oven and cool on a rack.

Prepare lemon curd; in a small heavy saucepan, combine 1/2 cup sugar, pinch of salt, 3 tablespoons lemon juice and egg yolks. Cook over low heat until thickened; stirring constantly. Remove from heat and stir in lemon zest; cool completely.

Remove brownies from pan and slice. Stir lemon curd so it will be easy to spread on cooled brownies.
