Mac & Cheese Cobb Salad
1 box macaroni and cheese
1/4 cup milk
3 tablespoons margarine
2 tablespoons blue cheese salad dressing
Salt and pepper
3 strips bacon
1 avocado, peeled, pitted and chopped
1 teaspoon lemon juice
2 Roma tomatoes, chopped
1 tablespoon chopped fresh chives
Make the macaroni and cheese with milk and margarine according to box directions, but use only 3 tablespoons margarine. Mix blue cheese salad dressing into macaroni and cheese. Season macaroni with salt and pepper to taste, and then chill until cool. Cook bacon until crisp. Drain on paper towels; then crumble. Pit, peel and chop avocado, and toss with lemon juice. Divide macaroni between 2 large plates. Arrange tomato, avocado, and bacon on top of macaroni. Sprinkle chives over top of salads, and serve.
Tip: Add chunks of pre-cooked white chicken or turkey meat to salad if desired.
