Buckaroo Brownies
2 cups all-purpose flour
2 cups sugar
1/2 cup (1 stick) butter
1/2 cup shortening
1 cup strong brewed coffee or water
1/4 cup baking cocoa
1/2 cup buttermilk
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
Butter Frosting
Preheat the oven to 400 degrees. Stir together the flour and sugar in a large mixing bowl. Combine the butter, shortening, coffee and cocoa in a heavy saucepan and bring to a boil, stirring constantly. Pour the mixture over the flour and sugar. Add the buttermilk, eggs, baking soda and vanilla and mix well. Pour into a generously buttered 10 by 15-inch baking pan, spreading evenly. Bake for 20 minutes or until the brownies test done in the center. Remove from the oven and pour the warm Butter Frosting over the top, spreading evenly. Cool on a wire rack. Cut into bars.
Butter Frosting
1/2 cup (1 stick) butter
2 teaspoons baking cocoa
1/4 cup milk
3-1/2 cups confectioners' sugar
1 teaspoon vanilla extract
Combine the butter, cocoa and milk in a saucepan and bring to a boil, stirring constantly. Add the confectioners' sugar and vanilla and stir until smooth and satiny. Use the frosting while warm.
