Corn and Pepper Stuffed Avacados (from DelMonte)
1 can corn
6 strips smoked turkey bacon
1 tbsp butter
1 ˝ tbsp Del Monte® red pepper, diced
1 ˝ tbsp Del Monte® green pepper, diced
3 Del Monte® Hass avocados, halved and pitted
In a pan, fry bacon with butter on medium heat. When done, place
on paper towel to rid of grease. Once cool, tear into small pieces.
Using the butter left in the pan, sauté the peppers for 3 minutes.
Add corn and cook for 5 minutes, mixing constantly. Add bacon.
Place mixture into avocado centers.
