Default Stay-Slim Secrets From a Star Chef

* Pair rich foods with lots of greens: "I eat pasta but a small portion, not a giant one, and I eat more greens than carbs," De Laurentiis says. Top a leafy salad with your favorite lean meat, or have a small side of mashed potatoes with a larger helping of steamed green beans. Or try her Skewered Greek Salad.

* Get to know portion sizes: Rather than being a slave to your measuring cups, learn to eyeball what's a sensible serving of food. "A good gauge is to think in terms of an appetizer-sized plate rather than dinner-sized," De Laurentiis says. Other visual cues: A 3-ounce serving of meat, poultry or fish is about the size of a deck of cards; two servings of pasta or rice is the size of a baseball; a bread serving is the size of a CD case; one serving of cheese is the size of four dice.

* Relish your food: "Tell yourself that you'll savor every bite," De Laurentiis says. When you stop to really enjoy what you're eating, you will be satisfied with less.

* Shop by the calendar: "Eat what's in season," De Laurentiis advises. "When you don't, it doesn't taste like anything, and it needs a load of fat or salt or sugar to taste good. A strawberry only tastes like a strawberry certain times of the year."

* Don't deprive yourself: To peel off the pounds she gained while pregnant with her daughter, De Laurentiis didn't live on rice cakes and celery or adopt a drastic fitness regimen. "I ate smaller meals," she says. "You should eat everything, but a little bit of it."
Blessed is the season which engages the whole world in a conspiracy of love.
