Potato Candy Peanut Butter Rolls
Potato Candy Peanut Butter Rolls: Boil 1 medium potato with the skin on until tender. Cool. Peel and remove dark spots. Quarter and dice in mixing bowl. Add 1 to 2 pounds powdered sugar and mix until it looks like cookie dough. Add 2 tsp vanilla or butter nut flavoring. Roll a handful of dough out on waxed paper to the size of a pie crust. Put a 16 ounce jar of peanut butter in bowl and add some powdered sugar to thicken. Spread peanut butter mixture onto rolled out dough and roll up like a jelly roll. Wrap in waxed paper and refrigerate overnight until set, then slice. Keeps well.
