Potato Chip Cookies
POTATO CHIP COOKIES
1 lb, butter (or 1/2 lb. butter-1/2 lb. margerine)
1 cup sugar
3 cups flour
2 cups crushed potato chips
1 cup finely chopped nuts (walnuts, pecans, etc)
1 TBSP. Vanilla
Powdered sugar for dusting.
Cream butter, Gradually add sugar and beat well. Slowly add flour, mixing well with each addition.
Add potato chips, Vanilla, nuts and mix thoroughly.
Shape dough into small rounds (1 or 1-1/2 inches diam.) Place on cookie sheet. Flatten slightly with fork.
Bake in 325 degree oven - 20 minutes…Cookies will be cream color when done.
Remove from oven and dust with powdered sugar while cookies are hot.
If serving at a later time, you may want to dust, again, as first dusting will partially dissolve into hot cookies.
These are surpisingly delicious!!!
