Pork and cider stew
I made this recipe for Mel's parents came over. Everyone loved it.
2 med sweet potatoes peeled and cut into 3/4" cubes
3 carrots peeled and cut into 1/2" coins
1 c chopped onion
2 lbs boneless pork shoulder cut into 1" cubes
1 lg granny smith apple peeled, cored and coarsely chopped
1/4 c flour
1/2 t each sage and thyme
1/4 t fresh ground pepper
1 c apple cider
layer sweet potatoes, carrots, onion, pork and apple in a large slow cooker.
Stir flour, sage, thyme, and pepper in a small bowl with apple cider until blended. pour over meat and vegetables.
Cover and cook on low for 7 to 9 hours.
