Wowmarker Irish Bread Pudding

Irish Bread Pudding

3/4 cup (half of a 12-ounce can) sweetened condensed milk

3/4 cup (half of a 12-ounce can) evaporated milk

1 cup whole milk

1/2 cup Irish whiskey

3 large eggs

1/2 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1 cup sugar, divided

1 cup raisins

Half a loaf of sliced egg bread, cut in 1/2-inch chunks, diced and toasted

Fresh whipped cream or vanilla ice cream

Preheat oven to 350 degrees. In a bowl, add the condensed, evaporated and whole milks, whiskey, eggs, vanilla, cinnamon and half of the sugar and stir until combined. Put the toasted bread cubes in a large bowl, add the raisins and pour the milk mixture over, tossing with a large spoon until the bread is soaked.

Pour mixture into 9 by 9 by 2-inch baking pan. Sprinkle the remaining sugar over the top. Bake for 30 minutes. Allow to cool slightly before cutting into squares. Serve warm with fresh whipped cream or vanilla ice cream. Makes 8 servings.
