This is what I ended up with. Thanks for the inspiration Barb!

I made a pile of these for a big holiday meal yesterday and they are ALL gone!!

I put the yolk mixture in a zip lock bag and sniped off the corner and squeezed it into the white part. I topped my eggs with a fresh spring of cliantro. They were beautiful if I say so myself. I got lots of favorable comments.

Yummy Deviled Eggs
INGREDIENTS:
6 eggs or more...just double or triple the measurements below if you want more.
1/4 cup mayonnaise or Miracle Whip.
2 tablespoons finely chopped onion or dehydrated onion to taste. I used dehydrated garlic.
3 tablespoons sweet pickle relish ...this makes it IMHO.
1 tablespoon prepared horseradish...this is a must too
1 tablespoon prepared mustard and a few sprinkles cider vinegar to taste.
paprika, for garnish...I used Hungarian Hot
salt and pepper to taste


DIRECTIONS:
1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and cut lengthwise.

2.Remove yolks from eggs. In a medium bowl, mash the yolks and mix together with mayonnaise, onion, sweet pickle relish, horseradish and mustard.

3.With a fork or pastry bag, fill the egg halves with the yolk mixture. Or put it into a ziplock bag, snip off corner, and squeeze it into the whites. Garnish with paprika, salt and pepper. Chill until serving.

I also topped mine with a sprig of fresh cilantro. Parsley will work too. Or dill weed.

Niceicon Spinach Deviled Eggs

Spinach Deviled Eggs

Ingredients
12 hard cooked eggs
1/4 cup mayonnaise
2 T vinegar
2 T butter, softened
1 T sugar
1/2 t pepper
1/4 t salt
1/2 cup frozen chopped spinach, thawed & squeezed dry
4 bacon strips, cooked & crumbled

Peel eggs and slice in half lengthwise. Remove yolks and set
whites aside. In a bowl, mash yolks with a fork. Stir in the
mayonnaise, vinegar, butter, sugar, pepper, and salt. Add
spinach and mix well. Stin in the crumbled bacon. Spoon
mixture into egg white halves. Serve immediately.
Yields 2 dozen halves
NOTE: Sprinkle with paprika or garnish with chopped chives.

Default Deviled Eggs (in time for Halloween)

Deviled eggs are my family's favorite and they love mine.

10 eggs (poke a small hole in the end of each egg before boiling, easier to peel)
While boiling move them around in the pan occasionally to have the yolk stay as much in the middle as possible.
Peel eggs and cut each in half placing yolk in separate bowl
Mix yolk with:
1 c Mayonaise or Miracle Whip(my fav)
1 c Horseradish sauce
1 tsp dry mustard (you can use regular mustard too)
Mix yolks as much as possible with ingredients and fill each egg with the mix
Sprinkle with paprika and parsley and serve

You can also decorate with paprika (orange) and pepper (black) for Halloween!
