Default Blistered Green Beans

I found this recipe in Better Homes & Gardens magazine. I didn't have any pistachios or orange peel, so I left those out. These were yummy with just the salt, pepper, garlic (I used garlic powder). But I will the share the recipe as it was originally written.

BLISTERED GREEN BEANS

1 pound fresh green beans, trimmed
2 TBSP olive oil
1/4 cup fresh parsley, chopped
1 large clove garlic, minced
1/2 cup roasted and salted pistachios, coarsely chopped
2 TBSP thin shreds orange peel

Preheat oven to 450°F. Toss beans in 15x10x1 inch baking pan with olive oil. Season with salt and pepper. Spread beans in a single layer. Roast 15 minutes or til blistered and tender.

Sprinkle hot beans with parsley and garlic. Top with pistachios and orange peel. Let stand 5 minutes. Server warm or at room temperature. Makes 4 servings.
