Default The Greek Salad Thread

This is great with steaks!
GREEK TOMATO SALAD
4 fresh tomatoes, chopped
1 cucumber, peeled and chopped
1 green bell pepper, cut into 1/2 ",pieces
1/2 cup chopped red onions
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon extra-virgin olive oil
1 teaspoon salt
1 tablespoon chopped fresh oregano
1/4 cup kalamata olives
1/2 cup feta cheese, crumbled

Mix together vinegars, oil, salt and oregano. Add other ingredients. Marinate several hours in refrigerator to allow flavors to blend. Serve.

Thumbs up Nancy's Greek Salad

Greek salad

1 head of romaine lettuce
6 oz calmata olives (1 cup)
1/2 lb feta cheese- crumbled
1 English seedless cucumber
12 oz of cherry tomato's halved
1 small red onion (soak in cold water for 5 minutes before slice)
1 green pepper

dressing:
6 tablespoons fresh squeezed lemon juice
2 cloves garlic, minced
1/2 teaspoon salt
1 cup olive oil
2 teaspoon's- minced fresh oregano

mix dressing well before put in salad - toss salad very well with dressing

Greek Salad



Serves 4
1 head romaine lettuce or mixed greens
3 - 4 tomatoes
1 small red onion
6-7 oz. feta cheese
2 or 3 cucumbers
Salt
Olives
Fresh oregano
2 Tbs. red wine vinegar
2-3 Tbs. olive oil
Cut the tomatoes, the onion and the cucumber in slices. Mix, add salt and crumbled pieces of feta cheese, oregano. Pour some olive oil before serving.

This looks great although 2-3 cucumbers seems excessive!

I got some of the mildest cukes at The Farmer's Mkt today. Adjust to your taste Oceangirl. I make this often without the lettuce.

Greek Dinner Salad



Ingredients

1/4 cup coarsely chopped fresh parsley
3 tablespoons coarsely chopped fresh dill
1 tablespoon extravirgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
6 cups shredded Romaine lettuce
3 cups diced tomato
1 cup thinly sliced red onion
3/4 cup (3 ounces) crumbled feta cheese
1 tablespoon capers (optional)
1 cucumber, peeled, quartered lengthwise, and thinly sliced
1 (19-ounce) can chickpeas, drained and rinsed
6 (6-inch) whole wheat pitas, each cut into 8 wedges


Preparation

Combine first 5 ingredients in a large bowl; stir with a whisk. Add lettuce and the next 6 ingredients (lettuce through chickpeas); toss well. Serve with pita wedges.
