Manhattan-Style Clam Chowder

1/4 pound bacon, diced
1 cup chopped onion
2 medium carrots, diced
3 ribs celery, sliced
1 teaspoon dried parsley flakes
1 can (28 ounces) tomatoes
1 1/2 teaspoons salt
3 cans clams (approx. 7 ounces each) minced clams with liquid
1/4 teaspoon ground black pepper
1 bay leaf
1 1/2 teaspoons dried leaf thyme, crumbled
2 1/2 cups diced potatoes, about 3 medium peeled potatoes

Brown bacon in a large skillet; add onions and cook until onions are tender. Transfer to slow cooker and add remaining ingredients. Cover and cook on LOW for 7 to 9 hours.
Serves 8 to 10.

Manhattan Clam Chowder
Makes 3 servings
2 slices thick-cut bacon, cut into ¼-inch pieces
½ cup refrigerated diced onion
¼ teaspoon dried thyme
¼ teaspoon crushed red-pepper flakes
3 medium-to-small red potatoes, cut into ¼-inch dice (about 2 cups)
1 cup water
1 clove garlic, smashed
1 small bay leaf
1 10-ounce can baby clams, drained, juice re served
1 14½-ounce can diced tomatoes with onion, cel ery and green pepper, drained, juice reserved
½ cup vegetable cocktail juice (such as V-8 brand)
½ teaspoon Worcestershire sauce
Salt and freshly ground black pepper
1 teaspoon lemon juice
Cook's notes: Our take on this creamless classic comes together in less than 20 minutes. For a nice meaty texture, be sure to buy baby clams, not minced clams.
Cook bacon, vegetables: Place bacon in a large saucepan over medium heat and cook until lightly browned. Drain off all but 1 tablespoon of the bacon drippings. Add the diced onion, thyme and red-pepper flakes; cook, stirring occasion ally, until the onion is translucent, about 4 min utes. Add the potatoes, along with the water, garlic, bay leaf and reserved juices from the canned clams and tomatoes. Bring to a simmer and cook until the potatoes are tender, about 8 to 10 minutes.
Assemble, simmer soup: Add the drained toma toes and clams, vegetable cocktail juice and Worcestershire sauce; simmer 1 minute.
Presentation: Add salt and pepper to taste, then the lemon juice. Serve immediately.
