Slow Cooker Hot Fudge Brownies

This one was from Reynolds, when I signed up for the Free Slow Cooker Liners

1 Reynolds® Slow Cooker Liner

1 package (about 20 oz.) brownie mix

1 cup chocolate syrup

1 cup hot water


OPEN slow cooker liner and place it inside a 5- to 6 1/2 -quart slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl.

PREPARE brownie mix according to package directions for cake-like brownies. Spread batter evenly in the lined-slow cooker bowl. Mix chocolate syrup and hot water; pour syrup mixture evenly over brownie batter. Place lid on slow cooker.

COOK on HIGH for 2 1/2 to 3 hours or until brownie edges are set.

CAREFULLY remove lid to allow steam to escape. Center may appear moist but wooden pick inserted near center should be clean. Let stand 30 minutes, uncovered, for center to set completely. Serve brownies with plastic or wooden spoon directly from slow cooker. Do not lift or transport liner with food inside. Cool slow cooker completely; remove liner and toss.

REYNOLDS KITCHENS TIP:
Hot Fudge Brownies are delicious topped with ice cream and drizzled with sauce.

Default Sweet and Sour Pot Roast

This sweet and sour pot roast is flavored with onions, vinegar, brown sugar, allspice, and other seasonings.

INGREDIENTS:

1 beef pot roast, about 4 pounds
2 tablespoons oil
1 medium onion, sliced
salt and pepper
2/3 cup vinegar
1/2 cup water
1/2 cup light brown sugar, packed
1/8 teaspoon allspice
flour

PREPARATION:

In a Dutch oven, brown roast slowly in hot oil over medium low heat. Add onion and cook for about 5 minutes longer, until onion is tender. Sprinkle with a little salt and pepper. Add vinegar, water, sugar, and allspice.

DIRECTIONS:

Cover and simmer for about 4 hours, or until tender. Remove meat and thicken gravy with 2 tablespoons of flour mixed with a small amount of cold water.

Sweet and sour pot roast serves 6.

Default Crockpot Chicken With Artichokes & Tomatoes

INGREDIENTS:

1 1/2 to 2 pounds boneless chicken breast halves, skin removed
8 ounces sliced fresh mushrooms
1 can (14.5 ounces) diced tomatoes
1 package frozen artichokes, 8 to 12 ounces
1 cup chicken broth
1/2 cup chopped onion
1 can (3 to 4 ounces) sliced ripe olives
1/4 cup dry white wine or chicken broth
3 tablespoons quick-cooking tapioca
2 teaspoons curry powder, or to taste
3/4 teaspoon dried thyme, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups hot cooked rice

DIRECTIONS:

Rinse chicken; pat dry and set aside. In a 3 1/2 to 5-quart slow cooker combine the mushrooms, tomatoes, artichoke hearts, chicken broth, chopped onion, sliced olives, and wine. Stir in tapioca, curry powder, thyme, salt, and pepper.

Add chicken to crockpot; spoon some of the tomato mixture over chicken.

Cover and cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours.

Serve with hot cooked rice.

Makes 6 to 8 servings.

Default Chicken, Oyster & Sausage Gumbo

Ingredients

1/3 cup all-purpose flour
1/3 cup cooking oil
1 large onion, chopped
1/2 cup chopped green sweet pepper
4 cloves garlic, minced
1/2 teaspoon ground black pepper
1/4 teaspoon ground red pepper
4 cups hot water
1 pound skinless, boneless chicken thighs, cut into bite-size pieces
12 ounces andouille or smoked sausage, cut into 1/2-inch slices and halved
1 pint shucked oysters, drained
Hot cooked rice
Whole okra, split to stem (optional)
File powder (optional)

Directions

1. In a heavy 4-quart Dutch oven stir together the flour and oil until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes more or until a dark, reddish brown roux is formed.

2. Stir in the onion, green pepper, garlic, black pepper, and red pepper. Cook and stir over medium heat for 3 to 5 minutes or until vegetables are tender.

3. Gradually stir the hot water into the vegetable mixture. Stir in chicken. Bring mixture to boiling. Reduce heat. Cover and simmer for 40 minutes.

4. Stir in the sausage. Cover and simmer about 20 minutes more or until chicken is tender. Remove from heat. Skim off fat.

5. Rinse oysters and drain well; stir into gumbo. Cover and simmer for 5 to 10 minutes or until the oysters are done and mixture is hot.

6. Spoon over hot cooked rice and, if desired, garnish with okra. If desired, serve 1/4 to 1/2 teaspoon filé powder to the side of each serving to stir into gumbo. Makes 6 servings.

Make-ahead tip: Prepare roux; cool. Transfer to jar or refrigerator container; cover and chill up to 24 hours before using

I love artichokes also. My mother used to stuff them but I just can't seem to find the time or patience.thanks again Donna

Default Slow Cooker Beef Stroganoff (Beefin' up the Beef Market)

This version of slow cooker beef stroganoff is made with round steak, mushrooms, garlic, and sour cream. (yummm!)

INGREDIENTS:

1 1/2 to 2 pounds round steak, cut in strips
1/4 cup all-purpose flour
1/2 teaspoon salt
1 medium onion, chopped
1 can or jar (4 to 6 ounces) mushrooms, drained
1 clove garlic, minced
2 beef bouillon cubes or equivalent granules or base
1 cup water
1 cup sour cream

DIRECTIONS:

Mix everything except the sour cream and put in slow cooker.
Cover and cook on LOW for 7 to 9 hours.
Stir sour cream into hot meat mixture about 10 minutes before serving.
Serve over hot cooked noodles.
