Thumbs up Bocconcini Pearl Filled Cherry Tomatoes

Ingredients:
1 tub (200g) Tre Stelle Bocconcini Pearls, drained
3/4 cup (175 mL) olive oil
1/4 cup (50 mL) fresh rosemary, chopped
2 tbsp (25 mL) fresh thyme, chopped
1 tsp (5 mL) salt
1 tbsp (15 mL) whole black peppercorns, cracked
2 cloves garlic, minced
2 packages cherry tomatoes

Directions:
In a medium bowl combine all ingredients except cherry tomatoes.
Cover and refrigerate 2 hours or overnight. If refrigerating overnight,
remove from refrigerator 1 hour before filling. Cut top quarters off of
cherry tomatoes and remove pulp using a small spoon. Fill each tomato
with marinated bocconcini. Garnish with any remaining rosemary or thyme.

Makes approximately 40

Click on the link I posted if you want more info. It looks like it is made in Canada for the most part.


Pepper probably has some connections to Canadian cheese since she grew up in MI.
