This is the way I make nachos Kelly. You can also cook ground beef to put on top too. Add sour cream, black olives, sliced green onions, and or diced tomatoes if you want.

Basic recipe: Easy nachos cooked in the microwave oven, with jalapeno peppers, cheese, and taco sauce.
Ingredients:
  • 4 ounces tortilla chips
  • 1/2 cup taco sauce
  • 1/2 cup shredded Cheddar cheese
  • jalapeno pepper slices, optional
Preparation:

Place tortilla chips on a paper plate. Pour taco sauce over chips. Sprinkle with the shredded cheese. If desired, top with jalapeno pepper slices.
Microwave on HIGH for 1 to 1 1/2 minutes, until cheese is melted.

You can make your own tortilla chips forthe nachos if you want

EASY TORTILLA CHIPS (LOWFAT)
12 (8-inch) tortillas
Heat the oven to 350 degrees. Cut each tortilla into 8 to 10 pie-shaped wedges. Place on a ungreased baking sheet in a single layer. Bake 10 to 15 minutes or until golden brown. (Watch closely they burn quickly)

or I have done this too but I shaped the dough by hand...

MASA HARINA TORTILLAS OR CHIPS
2 cups masa harina
1 1/4 to 1 1/2 cups hot water

Quickly stir water into masa harina, then mix with hands until dough is a soft consistency.
Form into a ball, turn out onto lightly floured surface and knead lightly until smooth. If the dough cracks or crumbles, you may need to add additional water. If the dough sticks too much, you can add additional masa.

Form the mixture into a cylinder about 4 inches wide. Cover the dough with an upside down bowl, or wrap in plastic wrap and allow to rest 30 minutes. After resting is complete, slice off 1/2 - 3/4 inch slices and press dough out using a tortilla press or tortilla baker OR A HOT PAN. If using a tortilla press, place waxed paper sheets on each side before pressing. Remove and stack. On a pre-heated pan, cook each tortilla about 1 minute (approx 30 seconds for each side).

Kelly, I use the Medallion (Walmart) bite size white corn tortilla chips, I use regular size dinner plates when making these with the above toppings, I also like Walmart's brand salsa, the mild chilies are sold at Walmart also small can is .67 cents, I buy 6 at a time, I love it as I said much better to us than pizza, and a lot less calories, so start with a plate of the tortilla chips and put on what you like

I am making a double batch of Wheat pasta with zucchini, mushrooms, onion, garlic, diced tomatoes, and jumbo shrimp, we love this dish and tomorrow's dinner is ready, I just dont add shrimp to tomorrows dish, I do that before I heat up the covered casserole dishes that way the shrimp is tender and fresh
