Berry Patriotic Yogurt Cups
Serves 8

1 cup graham cracker crumbs (10 graham crackers, broken into pieces and finely crushed)
1 1/2 Tablespoons sugar
4 Tablespoons butter, melted
1 1/2 cups blueberries, rinsed and drained
1 1/2 cups vanilla yogurt (or pudding)
1 1/2 cups raspberries, rinsed and drained

Fresh mint sprigs for garnish
1 1/2 cups cherries, pitted and halved, or 1 1/2 cups strawberries, sliced

Food processor
Dry measuring cups
Medium mixing bowl
Measuring spoons
Small mixing bowl
2-quart (8-cup) clear serving bowl or container or eight 1-cup clear dessert bowls or containers
Colander or sieve for berries

Flat-bottom drinking glass

Total Time: 25 minutes

Pulse graham cracker pieces in food processor until ground into fine crumbs.
In a medium bowl mix graham cracker crumbs and sugar. Add melted butter and work into crumbs with a fork or fingers until well incorporated. Firmly press crumb mixture using hands or a flat-bottom drinking glass evenly into the bottom of cups or serving bowl or container.
Add blueberries in an even layer on top of crumb crust.
Add yogurt or pudding in an even layer on top of blueberries.
Add raspberries in an even layer on top of yogurt. Cover with plastic wrap and chill until ready to serve. Garnish with mint sprigs if desired.
Chef's Note: If you do not own a food processor, place graham cracker pieces in a large, heavy-duty plastic resealable bag. Leave a small opening in the top of the bag to allow air to escape. Using a little pressure, roll a rolling pin over the plastic bag. Continue rolling over the bag until all pieces have been worked into crumbs.

Diane's Tip: For a different flavored crumb crust, substitute ginger snaps or vanilla or chocolate wafers for graham crackers.
