Coolicon Raspberry-Lime Coconut Ice Pops

Raspberry-Lime Coconut Ice PopsFrozen or fresh raspberries combined with lime and coconut make for a sweet-tart ice pop that refreshes the palate. It's a perfect summer treat.
Yield:
7 (3oz) ice pops
Time:
5 minutes to assemble
5 hours or overnight to freeze
Ingredients:

1 can A Taste of Thai Coconut Milk
1 (12oz) package frozen raspberries, thawed
1/2 cup sugar
2 tablespoons fresh lime juice


Equipment:Blender
Popsicle holder and sticks, or 3oz paper bathroom cups
Directions: 1 Add Coconut Milk, raspberries, sugar and lime juice to blender. Blend until smooth. We did not strain out the seeds, but if desired use a fine sieve or food mill. 2 Pour mixture into ice pop holders and insert popsicle sticks. Freeze 5 hours or overnight. We used rocket pops, which hold 3 ounces*.
Note: *3oz paper bathroom cups work well for ice pop containers. Insert popsicle sticks in center when mixture is almost frozen, or leave without and use like a push-up pop.
