Wagon Doctor's Parade Day Casserole
1 (6-ounce) package seasoned stuffing mix
1 cup water
1 tablespoon butter, melted
3 cups chopped cooked chicken
1/2 cup chopped onion
1/4 cup chopped green onion tops
1/2 cup chopped celery
1/2 cup mayonnaise
3/4 teaspoon salt (optional)
2 eggs, beaten
1-1/2 cups milk
1 (10-ounce) can cream of mushroom soup
1 cup grated cheese
Combine stuffing mix with water and butter in bowl; mix well. Place 1/2 of the mixture in 9 by 13-inch casserole. Reserve remaining mixture.
Combine chicken, onion, green onions, celery, mayonnaise and salt in bowl; mix well. Place over mixture in casserole. Top with remaining stuffing mix.
Combine eggs and milk in bowl. Pour over casserole. Refrigerate overnight. Remove 1 hour before baking time.
Preheat oven to 325 degrees.
Spread soup over casserole. Bake for 40 to 50 minutes. Remove from oven.
Poke holes in casserole. Sprinkle top with cheese. Bake for 15 minutes longer.
Must be made ahead. Great to make the day before parade day.
Yield: 10 to 12 servings.
