Fried Lemon Slices...beyond delish!!!
Fried Lemon Slices
(I had never had or heard of these before. They were served with salmon at my son's rehersal dinner and were beyond delish!)
Degree of difficulty: Low
1 Lemon - any kind except those ones with extra thick skin
Fresh breadcrumbs made by putting trimmed white bread into processor
Scrub lemon and dry. Cut into very very fine slices. Squeeze dry in your hands. Dip into flour, then eggs and lastly into fresh breadcrumbs. Patting down for a firmer hold. These can be made ahead and refrigerated up to an hour.
Pour Ĺ cm of oil into heavy based frying pan. When hot gently lower the lemon slices and cook until crisp. Turn and crisp. Drain on paper towels.

e.. on their own with a dab of mayonnaise
For a further garnish and flavour hit top with
c.. pureed roasted garlic
***If you don't want to go to all that trouble. Just dip the lemon slices into seasoned flour and pan fry in oil until lightly browned around the edges and some of the center is crisp looking too.****
