Lemon Blondies
(Recipe from the Virtual Bake Sale for Share Our Strength)
INGREDIENTS:
1 1/2 cup all-purpose flour
1 1/2 cup sugar
1 teaspoon salt
1 cup (2 sticks) butter; room temperature
4 eggs; room temperature
Juice from 1/2 lemon
Zest from 1 lemon
Lemon Curd:
1/2 cup sugar
pinch of salt
3 tablespoons fresh lemon juice
3 egg yolks
1 teaspoon lemon zest
DIRECTIONS:
Preheat oven to 350°. Line the bottom only of a 9X13X2-inch baking dish with Parchment paper and spray with Pam.
In a mixing bowl, stir together flour, 1 1/2 cup sugar and 1 teaspoon salt; add butter until combined.
Stir together eggs, juice from 1/2 lemon and zest from 1 lemon; stir into batter and pour into prepared pan. Bake for 30 minutes or until set.
Remove from oven and cool on a rack.
Prepare lemon curd: (I cheat and buy Dickinson's lemon curd from Smuckers...sometimes hard to find, but right tasty and a time saver!)
In a small heavy saucepan, combine 1/2 cup sugar, pinch of salt, 3 tablespoons lemon juice and egg yolks. Cook over low heat until thickened; stirring constantly. Remove from heat and stir in lemon zest; cool completely.
Remove brownies from pan and slice. Stir lemon curd so it will be easy to spread on cooled brownies.
