Question What recipes say FALL to you?

When the leaves start to change and it cools down I like to make chili, stews, squash, and apple dishes.

This is my fav chili recipe of all time...

Not Just Any Chili

Cook and drain:

2 lbs ground meat
1 large onion

Add to dutch oven or slow cooker with the following:

1 28oz can stewed tomatos
1 15 oz can tomato puree
2 15 1/2 oz drained kidney beans
3 tblsp each Worchestershire sauce and aromatic bitters(optional)
1 12 oc can beer or 1 1/2 c water
3 cloves garlic
1 beef boullion cube
1 tsp crushed red pepper
2 bay leaves (remove before serving)
1 T chili powder
1 tsp EACH coriander, cumin, thyme, oregano, and basil

Simmer uncovered for a couple hours on stove top or in the slow cooker for a few hours... Top with sour cream, grated cheddar cheese, or sliced green onions if you like

it isnt food but that creamy caramel candle from bath and body works makes me think of fall and eating caramel apples....

it is my fave scent ever!

Default Chowdah

New England Clam Chowder

INGREDIENTS:

1 slice hickory-smoked bacon, chopped
1/2 teaspoon butter
1 cup onion, minced
1 medium garlic clove, minced
1 tablespoon all-purpose flour
1 can clams (6-1/2 ounces)
1 cup bottled clam juice
1-1/2 cups Half and Half
1/4 teaspoon white pepper
2 medium potatoes, boiled, peeled and diced

DIRECTIONS:

In a heavy-bottomed, 4-pint soup kettle, sauté bacon, butter, onion, garlic over low heat. Do not brown, just sweat the veggie. Drain clams and set aside, reserving the juice. Slowly stir the flour and clam juices in the sauté mixture. Bring to a boil; reduce heat.

Add Half and Half and simmer 20 minutes. Add white pepper, potatoes and clams. Heat to serving temperature. Do not allow to boil, as this toughens the clams. Serve at once with crackers and warm cornbread.

Default Pumpkin Bread

PUMPKIN BREAD


INGREDIENTS:

1 1/2 c. flour
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1 c. pumpkin puree
1/2 c. vegetable oil
2 eggs, beaten
1/4 c. water
1/4 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/2 c. chopped nuts (optional)

DIRECTIONS:

Preheat your oven to 350.

Sift together the flour, salt, sugar, & baking soda.

In a separate bowl, combine the pumpkin, oil, eggs, water, & spices. Pour into the bowl w/ dry ingredients & mix just until all are combined - don't stir too much! Stir in the nuts, if you're using them.

Pour into a well-buttered 9x5x3-in. loaf pan, bake 50-60 minutes until done in the middle. Remove from pan, cool on a rack.

Keep wrapped in the refrigerator.

(My MIL allus used to save her 1 pound coffee tins and would bake her pumpkin bread in them.)
