8 cups chopped peeled tart cooking apples (about 3-1/2 pounds)
1/2 cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
In a Dutch oven, combine all the ingredients. Cover and cook over medium-low heat for 30 to 40 minutes or until apples are tender, stirring occasionally.
Remove from the heat; mash the apples (a potato masher works well) until sauce reaches desired consistency. Serve warm or cold. Yield: about 3-1/2 cups.
