Brown-Sugar Baked Apples



A delicious dessert from Redbook.

Ingredients

4 large Rome Beauty apples
1/3 cup raisins
1/3 cup chopped walnuts
1/3 cup firmly packed brown sugar
1 teaspoon grated orange peel
1 teaspoon margarine or butter


Directions

Core 4 large Rome Beauty apples (about 10 ounces each); to prevent bursting, cut 1/2-inch strip of peel from top of each and make horizontal cut in peel around middle of each.

Place apples in 9-inch glass pie plate. In small bowl stir 1/3 cup each raisins, chopped walnuts, and firmly packed brown sugar and 1 teaspoon grated orange peel to mix well; spoon mixture into cavities in apples, dividing evenly. Top each with 1 teaspoon margarine or butter.

Microwave, uncovered, on high (100% power) 18 minutes or until tender when pierced with fork, rotating apples halfway through cooking time. Serve accompanied, if desired, by heavy cream or vanilla ice cream.

Harvest Baked Apples


Ingredients:

8 medium baking apples
1 cup apple or orange juice
1/4 cup firmly packed brown sugar
1/2 tsp. ground cinnamon
1 cup (4 oz.) shredded 2% Milk Reduced Fat Sharp Cheddar Cheese
1/4 cup raisins
1/4 cup Chopped Pecans, toasted

Directions:

PREHEAT oven to 350°F. Remove cores from apples to within 1/2 inch of bottoms of apples; pierce the skins with a sharp knife. Place apples in shallow baking dish.

COMBINE juice, sugar and cinnamon; pour over apples.

BAKE 30 to 35 min. or until apples are tender, basting occasionally with the juice mixture. Remove apples from oven. Combine cheese, raisins and pecans; spoon evenly into centers of apples. Let stand 1 min.

Default Apple Butter

INGREDIENTS:

4 pounds Granny Smith apples, peeled, cored and quartered
1 cup water
1 cup apple cider
Brown sugar as needed
2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon allspice
Grated rind and juice of 2 lemons


DIRECTIONS:

Cook the apples in the liquid until soft and then run them through a food mill.

Add 1/2 cup brown sugar for each cup of puree. Add the spices, rind and lemon juice and cook over very low heat until thick and dark brown. This may take 3 to 4 hours. Cook slowly (makes the house smell great too!)

If not to be used within a week or two, pour into hot sterilized jars and seal tightly.

Default Ricotta Cheesecake w/ Caramelized Apples

Ingredients

Crust

1 cup gingersnap cookie crumbs (20 cookies)
2 tablespoons unsalted butter, melted
1 tablespoon packed brown sugar

Filling

1 1/2 cups whole-milk ricotta cheese, room temperature
3/4 cup granulated sugar
1 vanilla bean, split lengthwise, seeds scraped
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream, room temperature
3 large eggs, room temperature
Caramelized Apples
1 cup granulated sugar
1/4 cup water
1 teaspoon light corn syrup
4 medium Granny Smith apples, peeled, cored, and each cut into 8 slices
2 tablespoons unsalted butter 1/4 cup apple cider
Directions

Crust: Preheat oven to 350 degrees F. Grease a 9-inch springform pan with cooking spray.

In a bowl, mix crumbs, butter, and sugar. Press into bottom of prepared pan.

Bake 10 minutes. Place pan on wire rack.

Filling: In a food processor, process ricotta cheese, granulated sugar, and vanilla bean until ricotta is smooth. Add cream cheese and sour cream; process just until smooth.

In a large bowl, whisk eggs. Whisk in 1/4 of the cheese mixture. Fold in the remaining cheese mixture in two additions. Pour over the crust.

Bake 45 to 50 minutes, or until the edges rise, and the center is just set, but still jiggly. Place on wire rack to cool completely (cheesecake may crack).

Cover and refrigerate at least 4 hours or overnight.

Caramelized Apples:

In a large skillet, combine sugar, water, and corn syrup. Cook over medium heat, swirling the skillet occasionally, until the sugar dissolves and then caramelizes and turns amber in color.

Remove the skillet from the heat and immediately add the apples and butter. Stir to coat the apples with the caramel. Cook, turning apples occasionally until the apples are tender but still hold their shape, 5 to 10 minutes.

Once the apples are tender, remove them to a buttered plate. Stir the cider into the caramel and cook until slightly thickened, 1 to 2 minutes. Pour the caramel into a bowl and let cool.

To serve the cheesecake, remove the pan and, with a large spatula, transfer cake to a serving plate. Arrange the apples on top. Spoon the caramel over the apples and serve.

Default Boneless Pork Chops with Sauteed Apples

Ingredients

1 medium-size red onion
Salad oil
4 boneless pork loin chops, each 1 1/4 inches thick
Salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon coarsely ground black pepper
1 medium-size Golden Delicious apple
1 tablespoon sugar
1/2 cup apple juice
1 teaspoon cornstarch

Directions

Thinly slice onion. In nonstick 12-inch skillet over medium heat, cook onion in 2 teaspoons hot salad oil until tender. Remove onion to small bowl.

In same skillet over medium-high heat, cook pork chops 5 minutes, sprinkling with 1/2 teaspoon salt. Turn pork chops; sprinkle with thyme, pepper, and 1/2 teaspoon salt. Cook 3 to 5 minutes longer until pork just loses its pink color throughout. Remove pork chops to 4 warm dinner plates; keep warm.

Cut unpeeled apple into 1/4-inch-thick slices. In same skillet in 2 teaspoons hot salad oil, brown apple slices; sprinkle with sugar. Remove to plates with chops.

In cup, mix apple juice and cornstarch. Stir apple-juice mixture and onions into skillet, stirring constantly until mixture boils. Boil 1 minute. Pour mixture over pork chops and apple slices.

Default Warm Caramel Apple Cake

From Betty Crocker

Serve this yummy apple upside-down cake warm from the oven.

Prep Time:30 min
Start to Finish:1 hr 25 min
Makes:15 servings




Cake Ingredients:

1/2 cup butter or margarine
1/4 cup whipping cream
1 cup packed brown sugar
1/2 cup chopped pecans
2 large cooking apples, peeled, cored and thinly sliced (about 2 1/3 cups)
1 box SuperMoist yellow cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1/4 teaspoon apple pie spice

Topping Ingredients:

2/3 cup Whipped fluffy white frosting (from 12-oz container)
1/2 cup frozen (thawed) whipped topping
Caramel topping, if desired


Heat oven to 350°F. In 1-quart heavy saucepan, cook butter, whipping cream and brown sugar over low heat, stirring occasionally, just until butter is melted. Pour into 13x9-inch pan. Sprinkle with pecans; top with sliced apples.

In large bowl, beat cake mix, water, oil, eggs and apple pie spice with electric mixer on low speed until moistened. Beat on medium speed 2 minutes. Carefully spoon batter over apple mixture.

Bake 40 to 45 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes. Loosen sides of cake from pan. Place heatproof serving platter upside down on pan; carefully turn platter and pan over. Let pan remain over cake about 1 minute so caramel can drizzle over cake. Remove pan.

In small bowl, mix frosting and whipped topping. Serve warm cake topped with frosting mixture and drizzled with caramel topping.

High Altitude (3500-6500 ft): Bake 45 to 50 minutes.

Default Ham and Apple Strata

INGREDIENTS:

4 slices bread, cubed
12-oz. pkg. frozen escalloped apples, thawed*
1 cup chopped ham
1 cup shredded Cheddar cheese
1/2 cup shredded Havarti cheese
4 eggs, beaten
1/4 cup heavy cream
*(If you can't find frozen escalloped apples, use a 16 oz can of apple pie filling, removing a few tablespoons of the thickened liquid.)

DIRECTIONS:

Place bread cubes in a greased 9" deep dish pie pan. Cover with the apples. Then layer on ham and cheeses.
Beat together eggs and cream in small bowl. Pour over strata, cover and refrigerate overnight or up to 24 hours.

Preheat oven to 350 degrees F. Bake the strata, uncovered, at 350 degrees for 35-45 minutes until center is set and top is light golden brown. Serve with maple syrup and powdered sugar. 6 servings

Default Apple Baked Beans Recipe

INGREDIENTS:

3 (16-ounce) cans pork and beans, drained*
1/2 cup prepared barbecue sauce
1 medium sweet onion, chopped
2 Red Delicious apples, peeled, cored, and chopped
1/4 cup yellow prepared mustard
6 slices lean center cut thin bacon, cut into 1-inch pieces
*(Save time by using canned beans. Once you try baked beans this way, you'll toss out your old recipe. This is guaranteed to become a family favorite. It is easily made ahead and reheated. You may also double the recipe, but increase the baking time.)

DIRECTIONS:

Preheat oven to 375 degrees F.

Combine beans, barbecue sauce, onion, apples, and mustard.
Pour into a glass baking dish. Top with bacon pieces.

Bake for 45 minutes. Remove from oven and stir in bacon pieces. Return to the oven and bake an additional 30 minutes. Let rest 15 minutes before serving.

Make this baked beans dish in advance, if you wish. Reheat in a 350 F oven about 30 minutes until heated through. Recipe may be doubled, but adjust baking time upward accordingly.

Default Virginia Apple Smothered Pork Chops

Ingredients:

6 pork chops
3 tablespoons molasses
2 teaspoons salt
3 tablespoons flour
1-1/2 teaspoons sage
2 cups hot water
Vegetable oil
1 tablespoon cider vinegar
3 tart apples
1/3 cup raisins

Directions:

Season each chop with 1/4 teaspoon salt, and 1/4 teaspoon sage. In skillet, slowly brown chops on both sides in a small amount of vegetable oil. Place chops in a shallow baking dish; reserve drippings.

Peel, core and slice apples 1/4 inch thick; arrange on chops. Pour molasses over apples and chops.

Sprinkle flour over drippings in skillet; cook until brown, stirring occasionally. Slowly add water, stirring constantly to keep smooth; bring to boil. Stir in cider vinegar, 1/2 teaspoon salt and raisins.

Pour over apples and chops. Cover and bake at 350 degrees for 1 hour.

Default Apple Cheese Breakfast Pizza

Ingredients:

• 2 lbs. cream cheese, softened
• 14 oz. ricotta cheese
• 1-1/4 cups granulated sugar
• 1/4 cup milk
• 2-1/2 lbs. canned sliced apples, drained & chopped
• 3/4 tsp. ground cinnamon
• 8 oz. brown sugar
• 5 oz. all-purpose flour
• 4 oz. margarine, softened
• 4 oz. cheddar cheese, shredded
• 24, 5-oz. dough pizza balls


Directions:

To prepare cheese spread, combine cream cheese, ricotta cheese, 1/2 cup granulated sugar and milk in mixer. Beat with flat paddle attachment until smooth; set aside.

To prepare apple mixture, combine apples with cinnamon and remaining 3/4 cup granulated sugar. Toss to mix; set aside.

To prepare crumb topping, combine brown sugar, flour and margarine. Mix until crumbly; add cheddar cheese and mix thoroughly.


For each pizza, flatten 5 oz. dough ball into 7-inch diameter; place on baking pan. Top dough with 1/4 cup cheese spread, 1/4 cup apple mixture and 1 oz. crumb topping.

Bake at 525 degrees F until browned and bubbly, 8 to 10 minutes. Serve immediately.
