Quick Fettuccine Cacciatore

8 oz. fettuccine, uncooked
2 tsp. vegetable oil
1 lb. boneless skinless chicken breasts, chopped
1 cup each: sliced green peppers and sliced mushrooms
1 can (14-1/2 oz.) diced tomatoes, undrained
1/4 cup Italian Dressing
1/2 cup Shredded Italian Mozzarella/Parmesan Cheese Blend
1/2 cup chopped fresh basil leaves



COOK pasta as directed on package.
MEANWHILE, heat oil in large skillet on medium-high heat. Add chicken; cook and stir until no longer pink. Add peppers and mushrooms; cook 3 min., stirring occasionally. Stir in tomatoes with their liquid and the dressing. Reduce heat to medium-low; simmer 5 min. or until chicken is cooked through.
TOSS pasta with the chicken mixture; sprinkle with cheese and basil.

This is an old standby at our home.

Crockpot Chicken Cacciatore
INGREDIENTS:
  • 1 large onion, sliced thinly
  • 1 1/2 pounds skinless, boneless chicken breast halves
  • 2 (6 oz each) cans tomato paste
  • 8 ounces fresh sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic minced
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 bay leaf
  • 1/4 cup dry white wine
  • 1/4 cup water
PREPARATION:

Put sliced onion in bottom of slow cooker; top with chicken breast halves. Combine and stir together remaining ingredients. Spread over chicken. Cover and cook on low 6 to 8 hours, or 3 to 4 hours on high.

INGREDIENTS:
1/3 cup Pillsbury BEST® All Purpose Flour
Salt and black pepper
2 1/2 to 3 pounds meaty chicken pieces (breasts, thighs, drumsticks)
1/4 cup Crisco® Pure Vegetable Oil
1 medium onion, chopped
1/2 cup chopped green pepper
2 cloves garlic, minced
1 (14 1/2 oz.) can whole tomatoes, undrained
1 (8 oz.) can tomato sauce
1 (4 oz.) can sliced mushrooms, drained
3/4 teaspoon salt
1 teaspoon dried oregano leaves
Hot cooked noodles

PREPARATION DIRECTIONS: SKILLET DIRECTIONS

1.PLACE flour, salt and pepper in large resealable plastic bag. Add a few chicken pieces. Shake to coat. Remove chicken from bag. Repeat with remaining chicken. Heat oil in large skillet. Add chicken. Brown over medium-high heat.

2.REMOVE chicken from skillet. Add onion, green pepper and garlic to skillet. Cook and stir over moderate heat until tender. Add tomatoes, tomato sauce, mushrooms, salt and oregano, stirring to break apart tomatoes. Place chicken pieces on top of tomato mixture. Cover. Reduce heat.

3.SIMMER 30 to 40 minutes or until chicken is tender and meat near bone is no longer pink. Serve with noodles.

SLOW COOKER VARIATION

1.PLACE flour, salt and pepper in large resealable plastic bag. Add a few chicken pieces. Shake to coat. Remove chicken from bag. Repeat with remaining chicken. Heat oil in large skillet. Add chicken. Brown over medium-high heat.

2.PLACE browned chicken, onion, green pepper, garlic, tomatoes, tomato sauce, mushrooms, salt and oregano leaves in slow cooker. Cook on low for 8 to 10 hours or on high for 4 to 6 hours. Serve with noodles.
