North of the Border Bean Salsa
North of the Border Bean Salsa... this is a nice change of pace
Perfect for use by itself or as a dip.
1 package (10 oz.) frozen corn
1 can (15.5 oz) Black Beans, rinsed & drained
1 can (15.5 oz.) Small White Beans, rinsed and drained
1 cup onion, diced
3/4 cup red bell pepper, diced
1 jalapeño chile, seeded and diced
1 tomato, seeded and diced
2 tsp. Minced Garlic or 4 cloves garlic, minced
3 tbsp. fresh cilantro, minced
3 tbsp. fresh lime juice
3 tbsp. Olive Oil
1 tbsp. chili powder
2 tsp. ground cumin
Salt and pepper to taste
1. In a large bowl, combine all ingredients.
2. Season with salt and pepper.
3. Serve with tortilla chips or not .
