Default Grilled Peach and Red Bell Pepper Salsa

It's PEACH SEASON here in Oklahoma. . .time to break out all those wonderful, juicy peach recipes!

Preparation takes about 15 min and this recipe makes around 6 servings
Cooking time - 10 min

Ingredients:

2 tbsp olive oil
1 tbsp cider vinegar
1 clove garlic, pressed
2 tbsp fresh basil, finely chopped
1 tbsp fresh mint, finely chopped
2 large peaches, firm but ripe, halved and pitted
1/2 cup bottled roasted red bell peppers, drained and cut into half inch pieces

Directions:

Prepare grill or turn on broiler.
Combine first 4 ingredients and salt and pepper to taste in a bowl.
Lightly brush cut side of peaches with half of the oil mixture.
Grill or broil peaches about 2 minutes on the cut side only until golden. (Don't let them burn!) Transfer to a rack to cool. Chop peaches and combine with remaining ingredients and oil mixture in a bowl.
Season with salt and pepper to taste and toss.

Default Watermelon Apricot Barbecue Sauce

Prep time: 10 min
Cooking time: 30 min+/-

Ingredients:

2 tbsp olive oil
1-1/4 cups apricot preserves
3 cloves garlic, crushed
1/2 cup sesame seeds
1 tsp ground ginger, or 1 Tbsp fresh minced ginger
1/3 cup extra dry vermouth
1 cup watermelon, pureed
1 tbsp soy sauce, to taste
1 cup watermelon, minced

Directions:

Heat the oil in a 3 quart saucepan over medium-high heat.
Add the onion and garlic and sauté until the onion is soft and golden, about 8 minutes.
Add the ginger and sesame seeds and sauté another minute.
Reduce the heat to medium low and add the remaining ingredients. Bring to a simmer and adjust heat to maintain a slow simmer and simmer gently for 20 minutes, stirring frequently.

You can get about 8 1/2 cup servings out of this recipe.

Default Apple Pie Spice

It's closing in on holiday pie season and you might be able to save a dollar or two if you make your own pie seasonings. . .it's <cough> easy as pie!


4 Tbsp ground cinnamon
2 Tbsp ground nutmeg
1 Tbsp ground cardamom

Combine everything and store it in an airtight container until you make your apple pies!

Default Pumpkin Pie Seasoning

Two different seasoning recipes to use in place of purchased pumpkin pie seasoning. Use the one that appeals to you (one has allspice and is heavier on the nutmeg):

4 tsp ground cinnamon
2 tsp ground ginger
1 tsp cloves
1/2 tsp ground nutmeg

Mix it all together and store it in an airtight container.
