Somewhat Healthy, Absolutely Delicious Oatmeal Cookies

This recipe is an adaptation to the classic from the back of the Quaker Oats box. The great amount of fiber added in the form of whole wheat flour and bran makes the cookies easier to digest and not as rich.

Ingredients


1 1/2 cups butter, room temperature

2 cups brown sugar

1 cup white sugar

2 eggs

1/2 cup water

2 tsp vanilla

1 1/2 teaspoon salt

1 teaspoon baking soda

1 1/2 cups whole wheat flour

1/2 oat bran

1/2 cup wheat germ

1/2 cup ground flax seeds

6 cups rolled oats (not quick oats)

1 12-ounce bag chocolate chips or 1 cup raisins

1 1/2 cups chopped almonds
Directions

Preheat oven to 350 degrees. Cream together butter and sugars until they are fluffy. Add eggs, water and vanilla and mix thoroughly. Add remaining ingredients, one at a time until everything is well mixed.

Drop by teaspoonfuls onto greased cookie sheet. Bake 10-12 minutes.

Ok, I'm going to show my ignorance. Where do you buy "flax seeds"? In the spices or boxed like oatmeal or bagged like flour? I love Oatmeal Cookies, thank you for the recipe Mary.

Yes I have made these and I add flaxseed to lots of recipes. The flaxseed is across the aisle from the millions of cereals in my grocery. I buy Red Mill brand.

Flaxseed can be found at any health food store or the new health food sections at most grocery stores. Usually the stuff at the health food store is fresher, because it doesn't sit as long. You could also use hemp seed which is found usually only at health food stores, but it's great for you and you can put either of these things on anything or eat them with a spoon. (lol, I know, doesn't sound too appetizing, but really, they're just fine) I put mine on salads a lot along with avacados and sunflower seeds. Yum.

When I was growing up my family was very poor. Mom used to buy flax seeds, they were cheap then, and boil them. When she let the fluid cool it
would get a gel like consistency. She used to put in her hair and mine
to set it on rollers. Works just like a lot of the VERY EXPENSIVE gels
and mouses around today. Much better for your hair, too.

When my hubby was growing up his folks ate Uncle Sam's cereal and told him it was "adult" cereal. He found it here and wanted to try it and we have been eating it for a couple years now. It is loaded with flaxseed.
