Blue Cheese Mac 'n' Cheese
Serves 12
1 pound macaroni or penne
1/4 cup butter
1/4 cup flour
2 1/2 cups whole milk
2 cups Cheddar cheese, shredded
4 to 5 ounces blue-cheese crumbles
2 slices bread, whirled in processor or blender
* Prepare pasta according to package directions. Drain.
* In a large sauce pan, melt the butter. Whisk in the flour and pour in the milk, whisking. Add the Cheddar cheese and about 1/4 cup blue cheese. Stir until smooth. Remove from stove.
* Toss cheese sauce with drained pasta.
* Preheat oven to 400 degrees. Pour pasta and cheese into a 9-by-13-inch casserole. Mix bread crumbs with remaining blue cheese and sprinkle on top. Bake 15 minutes until browned and bubbly.
