Farmhouse Bacon Cheddar Breakfast Frittata
Prep Time:5 minutes
Cook Time:30 minutes
(Makes 6-8 servings)
1 tablespoon canola oil
4 cups frozen hash-brown potatoes with onions and peppers, thawed
¼ cup sour cream
8 eggs
½ cup cooked bacon (about 5 strips bacon), crumbled
1 (8-ounce) package Borden® Mild Cheddar Shredded Cheese
2 tablespoons butter
Preheat broiler. Heat oil in large skillet over medium-high heat. Add potatoes and cook until lightly brown. Season with salt and pepper to taste. Combine sour cream and eggs; mix well. Add bacon, cheese and potatoes; mix well. Heat butter in large skillet. Add egg mixture, cover and cook over low heat for 10 minutes or until eggs are nearly set. Broil for 1 minute or until eggs are set. Season with salt and pepper to taste; cut into wedges to serve.
