1 16-ounce package loose-pack frozen vegetable medley, thawed
1 11-ounce can condensed cheddar cheese soup
1/2 teaspoon dried thyme, crushed
1 20-ounce package refrigerated mashed potatoes
1 cup shredded smoked cheddar cheese (4 ounces) In a 1-1/2 quart casserole, combine vegetables, soup and thyme. Stir mashed potatoes to soften. Spread carefully over vegetable mixture to cover surface. Bake, covered, in a 350 degree oven for 30 minutes. Uncover and bake 15 minutes more or until heated through, topping with cheese the last 5 minutes of baking. Serves 4.
