Kentucky Burgoo


INGREDIENTS:
  • 1 chicken, 3 to 4 pounds
  • 1 1/2 pounds beef stew meat
  • 3 cups chicken broth
  • 2 cups beef broth
  • 2 cups water
  • 1 1/2 teaspoons coarsely ground pepper
  • 1/2 teaspoon cayenne pepper
  • 1 can (about 29 ounces) tomato puree
  • 12 small potatoes
  • 2 cups chopped onion
  • 1 medium head cabbage, finely chopped
  • 3 cans (14.5 oz each) diced tomatoes
  • 3 cans (12 to 15 oz each) whole kernel corn, drained
  • 1 pound carrots, sliced
  • 1 cup fresh sliced okra
  • 1 1/2 cups fresh or frozen butterbeans or lima beans
  • 2 green peppers, finely chopped
  • 2 to 4 teaspoons salt, to taste
  • 1 teaspoon pepper
  • 1/4 to 1/2 cup Worcestershire sauce
PREPARATION:

Cook chicken and beef in chicken, beef broth, and water with coarsely ground pepper and cayenne pepper until chicken and meat are very tender, about 30 to 45 minutes. Remove bones, dice and shred chicken and meat and return to the liquid. Add tomato sauce, potatoes, onions, cabbage, tomatoes, carrots, corn, okra, lima beans, and green pepper. Season with a little of the salt and pepper and the Worcestershire sauce. Cook slowly for 2 to 3 hours, stirring from the bottom to keep from scorching.Taste and add salt, to taste. Add water, if necessary, to keep from sticking.
Serves 10 to 12.

I was inducted as an Honorary Kentucky Colonel by the Kentucky
National Guard. Every year they invite me to join them at the derby
and for a private Mint Julep party. It's a lot of fun....oh, and so is
the horse race! LOL

Alas, I can't go to the derby this year. I have a trip planned to go to
Michigan to help Mom with some things.

Kentucky Derby Day is celebrated the first Saturday in May with visitors from around the world gathering at the racetrack. You can celebrate at home by gathering your friends and family to watch the race!

BOURBON BALLS


Ingredients

1 (16-ounce) package powdered sugar
1/3 cup bourbon
1/4 cup butter, softened
50 pecan halves (about 1 1/4 cups)
2 cups (12 ounces) semisweet chocolate morsels
1 tablespoon shortening

Directions:

Stir together the powdered sugar, bourbon and butter until blended. Cover and chill 8 hours.

Shape mixture into 1-inch balls. Gently press pecan halves into 2 sides of each ball. Chill 8 hours.

Melt chocolate and shortening in a saucepan over medium heat. Remove from heat. Dip bourbon balls in chocolate, and place on wax paper.

Chill 1 hour or until hardened.
Should make about 25 bourbon balls.

Classic Mint Julep

(Makes 1 (8-ounce) julep)

Ingredients

3 fresh mint leaves
1 tablespoon Mint Simple Syrup
Crushed ice
1 1/2 to 2 tablespoons (1 ounce) bourbon
1 (4-inch) cocktail straw or coffee stirrer
1 fresh mint sprig
Powdered sugar (optional)

Directions:

Place mint leaves and Mint Simple Syrup in a chilled julep cup.

Gently press leaves against cup with back of spoon to release flavors.

Pack cup tightly with crushed ice; pour bourbon over ice.

Insert straw, place mint sprig directly next to straw, and serve immediately. Sprinkle with powdered sugar, if desired.


MINT SIMPLE SYRUP

(Makes about 1 1/2 cups)

Ingredients

1 cup sugar*
1 cup water
1 cup loosely packed fresh mint leaves
Garnish: fresh mint leaves

Directions:

Stir together first 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute or until sugar is dissolved.

Remove from heat, and let stand 30 minutes. Pour liquid through a wire-mesh strainer into a cruet or airtight container, discarding mint leaves. Cover and chill 4 hours. Garnish, if desired. Syrup may be stored in refrigerator up to 1 month.

*3/4 cup sugar/no-calorie sweetener may be substituted.
