
I don’t usually have time to make breakfast, so I’m always on the lookout for quick morning meals. My new favorite is brown rice pudding. It’s really yummy! Plus, you can make a big batch, keep it in the fridge and microwave it one bowl at a time. Here’s how I make it:
1 cup of brown rice + 2 cups water in rice cooker til done. Lightly spray an 8″ casserole dish with Pam, add cooked rice, 2 beaten eggs, 1.5 cups of milk, a TBS of sugar, a TSP of cinnamon, 1/4 cup raisins and a handful of chopped walnuts. Bake at 350 for 30-40 minutes until liquids are absorbed. It’s almost like oatmeal, just not as mushy and boring.
