Let’s face it, leftovers can be B-O-R-I-N-G! I love to BBQ tri-tip, but I always seem to end up with a lot left over. This is a great way to use leftover tri-tip! It changes it into a completely different meal, so you and your family won’t feel like you are eating leftovers.
Thinly Sliced, Cooked Tri-Tip
Half of a Red Onion, sliced
Handful of Fresh Spinach
2 TBS Minced Garlic
1 TSP Olive Oil
Pat of Butter
1 Cup of Cheese (I used a Mexican cheese blend)
4 Flatbread Rounds
Preheat oven to 400°. Lightly butter flatbread. Saute onion and garlic in olive oil until brown. Add tri-tip and cook until warm, then add spinach and cook until soft.
Top flatbread with onion, garlic, tri-tip, and spinach, then sprinkle cheese evenly among each pizza. Bake in oven for 8-10 minutes or until pizza is golden brown. Slice into wedges and serve.
